Cantina del Castello – Winery in Soave

Cantina del Castello is located in Soave along the main street in the heart of the medieval village. The town, surrounded by the walls of the majestic castle, is famous for the production of quality wine, with a fresh and enveloping flavor.

The wines we produce are the mirror of the territory and are born with the aim of enhancing the characteristics of Soave in respect of tradition.

The historic cellar, located within the city walls of the Castle of Soave, is the heart of the winery, that operates in respect to the traditions and customs of its wines.

The production

The winery processes grapes coming from the vineyards located in the heart of the Soave Classico region (from where the wine also gets it name), whose soil is of volcanic origin.

The annual production is about eighty thousand bottles available in: Soave Classico and its Cru Pressoni, the Recioto di Soave Classico, the sparkling wines and the Grappa di Vinacce di Recioto.

Since its origins, Cantina del Castello has also produced red wines from Valpolicella, such as: Amarone and the Ripasso. The first bottles produced coming from the sixties, are   the same that today are jealously stored in the winery’s private collection.

According to the legend, the palace’s origin is connected to the Templar history and today represents the perfect combination between tradition and innovation. Here the past meets the present to create fine wines which contribute to the promotion and the valorization of the territory of Verona.

This essential link to history characterizes the philosophy of the winery that produces wines based on the research and the respect of the tradition of the Soave.

The vineyard

On the Soave Classico hills, there is Garganega and Trebbiano, the two main grape varieties of the area, which have their roots in the volcanic soil. From pruning to harvesting, a long and silent partnership between nature and craftmanship. The vineyard, of about twelve hectares on the hills of the classic zone, is sustainable and the work is exclusively done by hand.

Tasting tours

A unique place to taste wines that are a faithful expression of the Verona area, in the heart of the medieval village of Soave, in one of its oldest palace, it will be possible to choose between three different tastings which include a visit to the historic cellar to rediscover ancient traditions and flavors of the area.

• Shades of Soave: a path to discover the different variations of the indigenous Garganega grape with which the Soave DOC is produced. The tasting includes: a tour of the historic cellar, a glass of Soave Classico Castello, Soave Classico Pressoni and Recioto di Soave accompanied by a cheese tasting.
• Verona Experience: a journey through the regions to fully immerse yourself in the veronese experience by tasting the typical wines of the area which include the two areas Valpolicella and Soave, two neighboring but very different territories. The tasting includes: a tour of the historic cellar, a glass of Soave Classico Castello, Ripasso della Valpolicella and Amarone della Valpolicella, accompanied by a taste of cheese and salami.
• Wine&Horse: Riding a horse through the vineyards of Soave Classico Pressoni and arrive at the winery where you will have a tour and wine tasting of our wines. A collaboration with Country House Horse that will surprise you with a unique experience lived from a different point of view. The tasting includes: a glass of Soave classico Brut, a glass of Soave Classico Castello, a glass of Recioto di Soave paired with local cheeses.
• History and flavours of Soave: A day discovering Soave, one of the most beautiful Italian village. The offer includes a tour, with a professional guide, of the historic centre and the Soave Castle; traditional lunch in one of the typical restaurant of the town centre. The lunch includes: aperitif, seasonal risotto, two glasses of wine paired with the food, dessert, water and coffee; wine tour at our winery, located in the heart of Soave historic centre, with a tasting of our wines in the suggestive historic cellar.
• Mindful tasting: a wine tasting that will stimulate your senses. You will take part in an experiment involving both aromas and flavors that will be paired with a wine tasting. After the tour of the cellar, we will evaluate the typical aromas and flavor of our wines and we will try to memorize them. Then tasting our Soave classico Pressoni, Ripasso della Valpolicella and Recioto di Soave, we will put into practice the sensory experience you had before to evaluate the wine in a new perspective.
