Cà Rovere is a family-run winery devoted to the fine art of making spumante Metodo Classico: sparkling wine – or bollicine, as Italians like to call it – made following the Traditional Method.
For 3 generations, the Biasin family has been taking meticulous care of its 20 hectares estate, located on the Berici Hills (30min. South of Vicenza).
Chardonnay and Garganega grapes (the latter being an indigenous variety) are grown on the limestone-rich soil of these beautiful hills.
For 50 million years this land laid at the bottom of a warm prehistoric sea. Plenty of seashells and coral fossils were trapped in the rocks and are now part of the terroir, giving a delicate salty hint to its fruits.
Cà Rovere Metodo Classico is gaining increasing recognition for top quality sparkling wines, choosing to only make «Millesimato», or single vintages, with a minimum of 36 months ageing on lees. Such a long refinement results in rich, fragrant aromas and a creamy, tiny perlage. Cà Rovere elegantly blends Chardonnay with Garganega, an indigenous varietal with a distinctive white almond aroma: these unique cuvées are characterized by an intense minerality and make a perfect pair with local cheese and ham.
